Studies suggest that the noncoagulable nitrogenous material of potato juice, a byproduct of the starch industry, contains peptides and glycopeptides as well as amino acids and amides known to be present. Two polypeptide fractions have mol. wt. in the range 3000-6000 and 25 000 dalton.
